Our Story
Barnaby’s Italian Ice was created with one goal in mind: to bring joy and a new style of dessert to TEXAS
In the Spring of 2024, Eddie and Sabryna, alongside their Chief Pup Officer (CPO) and namesake, Barnaby, launched Barnaby's Italian Ice.
Eddie, a Connecticut native with deep roots in his Italian heritage, grew up enjoying authentic Italian Ice. When he introduced Sabryna, a Texas native, to this beloved East Coast treat, she instantly fell in love—and her life was forever changed. Missing the distinct taste of the dessert from New Haven, they soon realized there was nothing quite like it in Austin. Determined to bring the flavors they cherished to their home, they set out on a mission to create a truly special Italian Ice experience for their community.
